Many of us don't have the time to make a special/substantial breakfast during the week, at least not on a regular basis. It is the most important meal of the day, according to most experts.
Breakfast = break the fast.
Breakfast = break the fast.
It's nice to have more time and plan for a treat on the weekend/or days off.
I've been on a "pancake kick" lately and have been giving several "scratch" pancake recipes a try. Oh so yummy and a great way to treat yourself and those you love.
I usually stir up the dry ingredients the night before and then just add the wet ingredients in the morning. Almost as quick and easy as pre-mixed! And so much better, cheaper too. I like to add fresh blueberries (pick one add-on from the list in recipe) to these oat pancakes and they were extra yummy. Very nice flavour and texture.
A couple of changes I made to this recipe: I add 2 T. of fructose for a bit of sweetness and use a combination of 1/2 water and 1/2 cereal cream in lieu of the fat-free milk. Your choice on this. Finish off with some maple syrup or homemade jam! Yummm....
Have a wonderful weekend.
If you can, take time to treat someone you love, including yourself!

Oh yummy. Thanks for the link.
Have a wonderful weekend also.
Ger,
Pancakes are a favourite of mine, one of the first things I'd learned to make as a child. But haven't made them for years for some reason.
When Paul was little, I made them almost once a week, with raw apples added, it tasted abit like eating apple pie, - what could be better pie for dinner!
Thanks for the idea!
Brenda
Enjoy a restful weekend!

Looks so very good!
These pancakes are delicious. I especially like them with blueberries added.

Hi Brenda, Thanks for sharing this story. Yummmm....apple pie flavour, sounds good.
Hi Tammie,Too many mornings I have a cup of coffee and nothing else for HOURS after that. I get wrapped up in a project and forget to eat. I'm glad this was a yummy reminder for you today! Hope you try these too.
Hi Sandy C,They are so very good. I was so pleased to share the Quaker Oats photo, they were kind to give permission. I like the homey simplicity of this shot.
Hi Joe, I'm always happy to make you a nice breakfast. I hope you don't mind the "cereal mornings" LOL
Happy Weekend and see you next week,G
Oh dear, I might have to make pancakes for dinner tonight...!~ thanks G! Hope you are well. Love the looks of your new site. I will update my list to include it.
I am a big pancake fan. We make them with a bit of rice flour extra lightness. So good with fresh blueberries. NOMNOMNOM...
Hi Christine, I never think to make pancakes for supper, except the potato pancakes from my cookbook, that's the exception. Good plan for these though, thanks.
Hi Sel, I've never actually used rice flour, Ill have to give that a try.
Happy Cooking, G
