Take a Yummy Break....

                   
I absolutely love carrot cake and this recipe is my all-time fav!



With Easter on the way, I thought it was a good time to share this recipe here (see read more...for page 2) and the cream cheese icing recipe I added to it.

As with most recipes, I did a bit of tweaking and in the case of the cake, I make half the recipe (measures can be adjusted right on the Allrecipe site, I used 8 servings instead).

I also created the following rich and creamy (but not too sweet) icing to finish the cake:
                             
 Easy Cream Cheese Icing
                          
1- 8 oz. block light cream cheese
3 Tbl. pineapple juice
1 Tbl. lemon juice and the zest of one lemon
4 Tbl. liquid honey (or a bit more, to taste)
                          
coconut shreds (toast lightly first, if at all possible) and/or crushed pecans for topping .
                                    
Combine icing ingredients thoroughly and allow to chill in refrigerator at least one hour to firm up. Ice cake and add desired toppings.
                                   
For the 8 serving size, I used an 8″ x 11″ pan and reduced baking time to 45 minutes.

Other "tweaks" : I left out the raisins and used pecans instead of walnuts. Reduced sugar in cake slightly, adjust to your personal preference. I'm not a fan of overly sweet desserts, of any kind.

This recipe is a keeper!

We just had a carrot cake. I should have waited until Easter, though, It is a great holiday cake. Do you use cream cheese frosting on anything else?

Hi Teri, I'm glad you found the link, I should have made it clearer to begin with, thanks for letting me know. The icing and tweaks are obviously not on the recipe-site I mention, it really adds to the cake to use this icing and the pecans.

Hi Sandy, I can't really think of anything else I use cream cheese icing on. We aren't big dessert fans for the most part, but this cake...well that's an exception. LOVE IT! Do you use CC icing elsewhere? Did you make the carrot cake you are mentioning? I always prefer homemade mainly because the sugar content in commercial cakes is waaaay too sweet, in my opinion. The ingredients can be iffy too. And it's such an easy cake to make, isn't it?

This cake looks delicious, and what a nice idea to make it for Easter.

I like the idea of buttermilk, and pineapple to give it added yumminess and moisture.

The cream chees icing looks pretty special.

Oh man that looks yummy indeed, i love carrot cake not a big fan of cream cheese...oh when we went to mandarin my hubby got a slice of new york style cheesecake, gave me a bite and i almost gagged right there...nasty nasty lol an acquired taste i assume....I'm gonna try your recipe minus the cream cheese icing and oh by the way, I tried the "smart" kraft dinner and oh it was YUMMY, good call there girl, glad I tried it!

Hi Brenda, The combination of flavours in the cake and icing really makes this yummy. I love the taste of lemon and especially adding zest, I worked on this icing till I got it just right. I hope you try it and like it too.

Hi Cathy, Welcome back! I'm so glad you liked the KD Smart, it is kind of good for a "junky" treat, isn't it? And a bit better for us too, I'm guessing than regular KD! You might change your mind if you try this cc icing, it's not "sickening" sweet, like so many icings are, those I can't abide either!!!
